Celtic Broasted Potatoes

What You Need:

  • 2 T of olive oil
  • 1/2 t salt
  • 1/4 t pepper
  • 1 t parsley
  • 1 t chives
  • 4 white potatoes, wedged

How to Make It:

  1. Allow the oven temperature to rise to 400 degrees.
  2. Pour the olive oil into a shallow bowl large enough to hold a potato wedge.
  3. Sprinkle the salt and pepper into the oil.
  4. Add the parsley and chives to the bowl.
  5. Whisk until the ingredients are combined together well.
  6. Roll each potato wedge in the mixture being sure to cover completely.
  7. Place the potato wedges on a baking sheet in a single layer.
  8. Bake 25 minutes or until a golden brown, being sure to turn occasionally for even browning.

Serves: 4

Add a little grated Parmesan cheese or dry mustard to the coating mix for different taste.
