Chicken Provencale Recipe


Straight from Provence, this dish is full of Mediterranean vegetables and flavors and an absolute winner as a dinner party dish – try serving it to your partner on Valentine’s Day and you will certainly win their hearts!  A rich tomato sauce is a great accompaniment to the chicken along with the herbs, and the sprinkling of chili powder brings out all the flavors in this wholesome dish.

INGREDIENTS:

8 mini chicken breast fillets, skinless, or 2 chicken breasts each cut into 4
1 red pepper, deseeded and cut into small chunks
1 green pepper, deseeded and cut into small chunks
1 small red onion, roughly sliced
1 courgette, sliced down the middle lengthways, and cut into slices
½ tbsp dried Provence Mixed Herbs
2 cloves garlic, finely chopped
1 x 16 oz can of cherry tomatoes with garlic
1 tsp mild chili powder, to bring out the flavor
1 tbsp olive oil

 

METHOD:

In a saucepan, place the olive oil, garlic and peppers. Stir and cook gently for 3-4 minutes. Add the onions and courgette slices, and continue to stir until the vegetables are lightly softened.

Add the canned tomatoes, the herbs and the sprinkling of chili, stir and leave to simmer for 10 minutes, so that the sauce thickens.

Meanwhile, grill the chicken fillets on a baking sheet, turning to prevent burning, until they are cooked through.

Place the chicken fillets in the sauce, and continue to cook for a further 5 minutes.

Serve with green beans or more seasonal vegetables, and a sprinkling of fresh chopped basil.

Bone and Rolled Roast Loin of Pork with Chunky Apple Sauce Recipe


This is a delicious roast to have with friends or family, and making your own apple sauce is far more tasty than shop-bought ones. You can spice the apple with cinnamon and nutmeg, and we have also known dishes where the sauce is spiced with chili. Be inventive! Get your butcher to bone and roll the meat for you and score the skin to make delicious crackling.

Preparation Time: 10 minutes
Cook Time: 1 hour 30 minutes

 

INGREDIENTS:

For the pork
1 boned and rolled loin of pork, approx 3 lbs
2 tbsp olive oil
Sea salt to rub into crackling
2 rosemary branches
1 white onion, cut in half

For the apple sauce
4 medium sized apples, peeled and cored, cut into small chunks
½ tsp cinnamon
¼ tsp nutmeg
1 tbsp light brown sugar or caster sugar

 

METHOD:

Heat oven to 400°F/200°C.

Rub the pork all over with olive oil and sea salt. Place in a large roasting dish with the rosemary underneath. Place the onion halves on either side of the pork.

Roast in the oven for 20 minutes until the skin starts to crackle. Turn down the oven to 340°F/170°C.

Roast for a further 1 hour and 10 minutes, until the crackling is completely crisp. Test with a pointed knife in the centre of the meat, to ensure that the juices run clear. If not, continue to roast for a further 10 minutes.

While the meat is roasting, make the apple sauce by placing the diced apple into enough water to cover it and bring to the boil. Simmer on just below boiling point for approximately 25 minutes until the apple is tender but not ‘mushy’. Put the cinnamon and nutmeg into the apple mix and stir. Remove from the heat and allow the spices to permeate the apple. When cooled, drain away the liquid, and place the apple sauce into a pretty bowl.

Remove the meat from the oven and leave to cool slightly before carving, so that the meat has relaxed. Remove the rosemary from the baking tray, squeeze the flesh from the onions and add stock to create a wonderful aromatic gravy.

Spicy Thai Soup with Pork Meatballs Recipe


A warming and delicious dish, quite filling and with a lovely kick of Asian spices and herbs. You can put the noodles into the dish, but we have served them separately so that guests can ladle them in themselves.

Serves: 2-3 people
Preparation Time: 10 minutes
Cook Time: 15-20 minutes

 

INGREDIENTS:

8 oz pork mince
14 fl oz coconut milk
17 fl oz chicken stock
2 tbsp Thai Green Curry Paste
2 cloves garlic
Handful of coriander, leaves removed and set aside
1 tbsp fish sauce
Zest and juice of 2 limes
Small selection of crisp vegetables, such as baby corn, mange tout.

Serve with rice noodles

 

METHOD:

Put coriander stalks and garlic into a food processor and pulse until fine. Add pork mince and blend again.

On a lightly floured surface, make into meatballs approximately 1½ inches in diameter.

Heat curry paste with a little water for a few minutes, but do not boil. Pour in the coconut milk, stock, lime and fish sauce.

Simmer, add the meatballs for a few minutes. Add the vegetables and continue to cook for a further 5 minutes, until meatballs are cooked through.

Serve in bowls with the cooked noodles as a side dish, so that guests can add the amount they want to the soup.

Sprinkle with coriander and season to taste.

Spicy Sausages with Beer-Braised Onions Recipe


Nothing like a tasty spiral sausage with delicious caramelized beer-braised onions - wholesome, hearty and full of flavor. Serve this dish with creamy mashed potatoes or sweet potatoes for a complete and filling meal. Try to get a spiced sausage such as chorizo or Merguez, and make sure that the spiral is firmly gripped with the stick or brochette, to prevent them from uncurling during cooking. You can cook the sausages on a barbecue, or under the grill.

Cook Time: 20-25 minutes

 

INGREDIENTS:

8 long, quite thin chipolata style sausages, rolled into whirls and firmly fixed
4 very large onions, diced or sliced – not too thick
2 tbsp olive oil
1 tbsp sugar
10 tbsp beer or ale
10 tbsp vegetable stock (extra if the onions begin to dry out)

 

METHOD:

Line a flat baking tray with foil and place the sausages on top. Heat the grill ready to cook the sausages.

In a large frying pan, heat the oil. Put the onion and sugar into the pan, stir and leave to sweat until almost tender. Add the water and beer, turn the heat down to very low and continue to cook, stirring occasionally – do not let the onions dry out or burn.

Put the sausages under the grill and brown for 6-8 minutes before turning over to grill the other side. Depending on the thickness of the sausages, it may take a little less time, so be careful.

Once the sausages have cooked, place the onions on the serving plates, top with the sausages and a little more braised onions.

Normandy Apple Tart Recipe


A classic French tart with a hint of almonds and a touch of Calvados (apple brandy) make this a deliciously indulgent dessert for friends and family.

Serves: 6
Preparation Time: 24 minutes
Cook Time: 30 minutes

 

INGREDIENTS:

9 oz ready made sweet butter pastry

For the filling
3 large apples, peeled and finely sliced
Caster sugar, for sprinkling
3 tbsp Calvados or apple brandy

For the Frangipane
3½ oz unsalted butter, cubed and softened
3½ oz caster sugar
2 eggs
2 oz plain flour, sifted
2½ oz ground almonds
2 drops almond essence

 

METHOD:

Heat oven to 400°F/200°C/Gas Mark 6

Grease a 10 inch loose bottomed tart or flan tin. Roll out the pastry to fit the tin. Prick the bottom of the pastry.

To make the frangipane, mix the butter and sugar together thoroughly, then add the eggs, one at a time. Fold in the flour, ground almonds and almond essence until combined.

Spread the frangipane over the bottom of the pastry and lay the apple slices in a pattern over the top. Sprinkle with the Calvados.

Bake in the oven for 15 minutes until beginning to brown. Remove from the oven, turn down the temperature to approx 350°F/180°C/Gas Mark 4, sprinkle over the caster sugar and place back in the oven for a further 10-15 minutes to cook.

Bake until caramelised, remove from the oven. Leave to cool slightly and then serve with clotted cream or ice cream.

TIP 1:  You can glaze the top of the tart with apricot jam if preferred, to make it ‘non alcoholic’.

TIP 2: Try mixing the Calvados in with the cream for a really boozy dessert!

Apple, Rhubarb and Berry Traybake Recipe


This is so delicious, and we have added an extra twist – custard inside the traybake to give it that lovely ‘oozy’ texture inside. This traybake is really yummy with coffee or afternoon tea, but also in a lunch box. Once cool, you can reheat and serve with cream or ice cream, or more custard!

Serves: 16-20 pieces
Preparation Time: 15 minutes
Cook Time: 30 minutes

 

INGREDIENTS:

9 oz butter
5 oz caster sugar
3½ oz dark brown sugar
4 large eggs
1 tsp vanilla extract
12½ oz self-raising flour
2 tsp baking powder
1 tsp cinnamon
7 oz rhubarb
10 oz Bramley apples, peeled, cored and thinly sliced
3½ oz berries, such as blackberries or blueberries
4 oz ready-made pouring custard
1 oz Demerara sugar

 

METHOD:

Preheat the oven to 350°F/180°C/Gas mark 4. Butter and line a rectangular baking tin (approximately 11 in x 8 in) with baking paper.

Poach the rhubarb with a little sugar for approximately 5 minutes.

Place the butter, caster sugar and dark brown soft sugar into a large mixing bowl and beat for 2-3 minutes until smooth. Add the eggs and vanilla and continue to beat for 2 minutes. Finally add the flour, baking powder and cinnamon and beat briefly to combine.

Spread half the mixture into the prepared tin. Arrange half the apples, half the rhubarb and half the berries over the top of the mixture, drizzle with half the custard, and then repeat the process. Before baking, sprinkle over the Demerara sugar.

Bake for 45-50 minutes until golden and springy to the touch. Leave to cool for 10 minutes, then turn out of tin and remove paper. Cut into bars or squares before serving.

Left Front: Skip 2 spaces on last long row, join yarn in next space, ch 3, work to left front edge; 10 (11) groups. Finish same as right front.

Sew shoulder seams matching stitch for stitch. Starting at shoulder seam, crochet 1 row of sc around fronts and neck, do not inc at corners to round them. Starting at underarm, crochet sc around armholes.

Ties: Join yarn at front edge at start of neck. Ch 24, sl st back along chain, fasten off. Make tie at opposite edge.

Skirt: Ch 100 (108). Work same as vest having 49 (53) groups on group rows and 50 (54) dc on openwork rows, to about 11 (12½) inches or desired length from start, end with openwork row then work 1 more openwork row for eyelets. Fasten off. On right side crochet 1 row of sc around front and lower edges, do not inc at corners to round them.

Big & Little Dresses Pattern


Directions are for Toddler Size (2 to 4). Changes for Child (6 to 8), Petite Miss (8 to 10) and Average Miss (12 to 14) are in parentheses.

MATERIALS REQUIRED:
Columbia-Minerva KNITTING WORSTED (4 oz pull skein) OR NANTUK 4-PLY KNITTING YARN (2 or 4 oz pull skein): 8 (10-12-12) ozs
Needles: For Toddler & Child — one "Boye" crochet hook Size H
For Petite & Average Miss — one "Boye" crochet hook Size I

Gauge: On Size H — 3 shells to 5 inches
On Size I — 3 shells to 5½ inches

Back: Ch 27 (31-35-39) very loosely for neck and shoulder.

Row 1: In 7th ch from hook work 2 dc, ch 2 and 2 dc for a shell, * skip 3 ch, 1 shell in next ch, repeat from * 4 (5-6-7) times more, ch 3, turn.

Row 2: 1 shell in ch-2 space of each shell, end 1 dc in turning-ch, ch 3, turn. Repeat Row 2 having 6 (7-8-9) shells across, for pat, working 4 (4-5-6) more rows, omit turning-ch at end of last row.

Fasten off, leave end for marker.

Front: Work same as back, do not fasten off, ch 3 at end of last row.

To Join: Work same as Row 2 across front, end 1 dc in turning ch, ch 3 for underarm, join to back by working 1 dc in marked dc, 1 shell in each shell across back, 1 dc in last dc, ch 3 for underarm, join to first dc on front. Fasten off.

Body: Join yarn in center ch st at underarm. For first shell ch 3, 1 dc, ch 2 and 2 dc in center st, 1 shell in each shell across front, 1 shell in center st of underarm chain, 1 shell in each shell across back, sl st to ch-3 of first shell, sl st to ch-2 space of same shell, there are 14 (16-18-20) shells around. Width around is 23 (26½-33-36½) inches.

Row 2: Ch 3, 1 dc, ch 2 and 2 dc in first space, 1 shell in each shell around, join to ch-3 of first shell, ch 1, sl st to space of same shell. Repeat last row 3 (4-6-6) times more. Working a 2 dc, ch 3 and 2 dc shell in each shell, work 4 more rows.

Toddler & Child only join to ch-3 of first shell, ch 1, sl st in space.
Misses only working a 3 dc, ch 3 and 3 dc shell in each shell, work 5 more rows, join to ch-3 of first shell, ch 1, sl st to space.

All Sizes ch 3, work 1 (1-2-2) dc, ch 2 and 2 (2-3-3) dc in space for first shell, * ch 1, in next ch-3 space work 11 dc for scallop, ch 1, 2 (2-3-3) dc, ch 2 and 2 (2-3-3) dc shell in next shell, repeat from * around, end ch 1, scallop in space of last shell, ch 1, join to ch-3, ch 1, sl st to first space.

All Sizes: Sew shoulder seams from outer edge for ½ (½-1-1) inch. Working backward from left to right crochet 1 row of sc around neck and armholes.
