Chicken Provencale Recipe

Straight from Provence, this dish is full of Mediterranean vegetables and flavors and an absolute winner as a dinner party dish – try serving it to your partner on Valentine’s Day and you will certainly win their hearts!  A rich tomato sauce is a great accompaniment to the chicken along with the herbs, and the sprinkling of chili powder brings out all the flavors in this wholesome dish.

Serves: 2
Preparation Time: 10 minutes
Cook Time: 25 minutes

 

INGREDIENTS:

8 mini chicken breast fillets, skinless, or 2 chicken breasts each cut into 4
1 red pepper, deseeded and cut into small chunks
1 green pepper, deseeded and cut into small chunks
1 small red onion, roughly sliced
1 courgette, sliced down the middle lengthways, and cut into slices
½ tbsp dried Provence Mixed Herbs
2 cloves garlic, finely chopped
1 x 16 oz can of cherry tomatoes with garlic
1 tsp mild chili powder, to bring out the flavor
1 tbsp olive oil

 

METHOD:

In a saucepan, place the olive oil, garlic and peppers. Stir and cook gently for 3-4 minutes. Add the onions and courgette slices, and continue to stir until the vegetables are lightly softened.

Add the canned tomatoes, the herbs and the sprinkling of chili, stir and leave to simmer for 10 minutes, so that the sauce thickens.

Meanwhile, grill the chicken fillets on a baking sheet, turning to prevent burning, until they are cooked through.

Place the chicken fillets in the sauce, and continue to cook for a further 5 minutes.

Serve with green beans or more seasonal vegetables, and a sprinkling of fresh chopped basil.
