Lucky Irish Potato Mash

What You Need:

  • 2 lb. white potatoes, peeled and cut into quarters
  • 1 lb. apples, peeled, cored and sliced
  • 1 T sugar
  • 4 T butter

How to Make It:

  1. Place the potatoes into a large saucepan.
  2. Fill the saucepan with just enough water to cover the potatoes.
  3. Place the saucepan over medium heat.
  4. Bring the water to a brisk boil.
  5. Allow the potatoes to cook 10 minutes or until fork tender.
  6. Place the apples in a separate saucepan.
  7. Place 1 T of water in with the apples.
  8. Sprinkle the sugar over the top of the apples.
  9. Place over medium heat and allow the apples to cook 8 minutes or until tender.
  10. Drain the potatoes well and mash with a potato masher.
  11. Add the cooked apples to the mashed potatoes.
  12. Add the butter and stir until completely combined.

Serves: 4

Serve this as a side dish with lamb or salmon. Garnish the top with crumbled bacon and parsley.
