Almost like a crustless pizza, save yourself time and make this for a quick lunch, brunch or supper.

INGREDIENTS:
6 eggs
2 handfuls baby spinach
16 medium-sized slices pepperoni
3 oz cheddar cheese, grated
Olive oil for greasing
Seasoning to taste (plenty of ground black pepper)
METHOD:
Heat oven to 350°F/180°C/Gas mark 4
Lightly oil an 8 x 8 roasting or baking tin.
Put the spinach in the bottom of the tin. Lay 8 of the pepperoni slices over the top, spaced evenly.
Whisk the eggs and add the grated cheese. Stir to combine. Season.
Pour the mix over the pepperoni and spinach, then top with the remaining pepperoni.
Bake in the oven for 20-25 minutes until firm to the touch.
Serve with a tossed salad and crusty bread.
