Bacon & Spinach Appetizer Balls

These bacon & spinach appetizer balls are a wonderful treat for your next get together. They are easy to make and are a nice change from traditional party appetizers.

If you have kids that like to cook, have them help assemble the balls once the bacon is cooked and cooled.


Ingredients:

  • 3 slices cooked bacon, crumbled
  • 2 beaten eggs
  • 1 10 oz box chopped spinach, thawed & well drained
  • 1 cup seasoned croutons, crushed
  • ½ cup parmesan cheese
  • 2 Tbsp. soft margarine or butter
  • ¼ tsp. salt

Directions:

Preheat oven to 350 degrees.

Cook the bacon (pork or turkey) until crisp then crumble or chop into pieces.


In a small bowl, beat the eggs.


Add the bacon to the eggs.


Next, add the drained spinach.


Add one cup crushed croutons.


Follow the croutons with the parmesan cheese.


Next add the softened butter.


Finally, add the salt.


Thoroughly combine the ingredients.


When it is completely incorporated, the mixture will look like this.


Pinch off a bit of the ingredients and roll them into an inch-sized ball.


Place the appetizer balls on ungreased cookie sheet. Sprinkle with additional parmesan cheese, if desired.  Bake for 15 minutes.


Remove the appetizer balls from the baking sheet and place on a serving dish.
