Bacon Meatballs with Mango Honey Mustard Sauce Recipe

A great buffet dish or snack dish to watch the TV with! Really easy to make and extremely tasty, particularly with the dip.            

Serves: 4 (about 20 medium sized meatballs)                
Preparation Time: 10 minutes
Cook Time: 20-25 minutes

 

INGREDIENTS:

1½ lbs ground beef (or any other ground meat you see fit)
6 slices of bacon, cut into 1 inch pieces
½ yellow onion, diced
1 egg, whisked
1½ oz flour
1 tsp cumin
½ tsp chili powder
1 tsp chopped dried mixed herbs
Salt and pepper, to taste

For the dipping sauce:
1 mango, peeled and diced
2-3 tbsp ground old fashioned mustard (in the jar)
1-2 tbsp yellow mustard
1 tbsp honey
1 tbsp chili powder
Salt and pepper to taste

 

METHOD:

Heat oven to 180°C/350°F/Gas mark 4.

In a large frying pan, cook the bacon until the fat renders into the pan. Remove and drain on kitchen paper.

Put the onions into the bacon fat, and gently ‘sweat’ them until soft. Remove and add to the bacon.

When drained and cool, add the minced or ground beef, cumin, chili, dried herbs, eggs and flour. Place on a baking sheet lined with aluminum foil and bake in the oven for 20 minutes, or until firm and cooked.

Whilst the meatballs are cooking, make your mango dipping sauce, by placing all the ingredients into a blender or food processer, and blitz until smooth. Add extra seasonings if required.

Serve the meatballs with the dip, or use as a starter on a bed of rocket or crisp leaves.
