Crispy Baked Toast

What You Need:

  • 1/2 C of egg substitute
  • 1/2 C of skim milk
  • 1/4 C of orange juice
  • 1 tsp vanilla extract
  • 1/8 tsp nutmeg
  • 12 sliced of French bread
  • 1 1/2 C cornflakes, crushed

How to Make It:

  1. Set the oven to 425 degrees and preheat.
  2. Place the egg substitute, milk, orange juice and vanilla extract into a shallow bowl and whisk until well combined.
  3. Sprinkle in the nutmeg and stir until blended in well.
  4. Add the bread and soak for 5 minutes, turning once.
  5. Place the cornflake crumbs into another shallow bowl.
  6. Place the coated bread slices into the cornflake crumbs and coat both sides evenly.
  7. Place the coated slices of bread into a casserole dish being sure they don’t overlap.
  8. Bake for 10 minutes, turn and continue baking for 5 minutes or until golden brown and crispy.

Makes 6 servings

The cornflakes give this toast a nice little crunch. The orange juice, vanilla and nutmeg give it a wonderful good morning taste.
