Broccoli Cheese Soup Recipe

Simple, easy, and delicious, this broccoli cheese soup makes a perfect lunch or quick supper. Done in under 30 minutes, you can have supper on the table in no time!

Make your roux by melting some butter in a medium sauce pan and adding the flour. Cook, stirring frequently, over low heat until the roux develops in color to a light golden brown.


Add the chicken stock, salt, and pepper, and cook over medium heat until thickened. Reduce heat to low and slowly add the cheese.


Steam the broccoli and chop into bite-sized pieces.


Add the broccoli to the soup and serve hot. If the soup is too thick, add some of the water from the broccoli steaming.


Broccoli Cheese Soup

Ingredients

  • 4 1/2 cups chicken broth
  • 1/3 cup flour
  • 1/2 cup butter
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese
  • 1/2 cup shredded mozzarella
  • 3 cups steamed chopped broccoli

Cooking Directions

  • Melt butter in a medium sized sauce pan and and add flour. Stir frequently and simmer over low heat until the roux starts to develop and turn golden brown.
  • Add chicken broth to the roux and increase heat to medium, stirring until thickened. Add the salt and pepper. Reduce heat to low after the soup is thickened, and add cheese, slowly, stirring frequently until combined well.
  • Steam the broccoli in the microwave until crisp tender.
  • Add the broccoli and cream to the soup. If the soup is too thick, add some of the water from the steamed broccoli.
