Chicken and Dumplings Recipe

Nothing is quite as comforting as a bowl of homemade chicken and dumplings. Maybe it stems from childhood memories or perhaps it’s the smell and flavors blending into pure deliciousness. Whatever the reason, it is sure to be a family favorite among your house too. 

We start this recipe with boneless, skinless chicken breasts boiled with spices to make the broth. Then we shred the breasts, add our homemade dumplings and before you know it, you have a warm satisfying meal.


Ingredients

Chicken:

5 boneless, skinless chicken breasts
½ tsp. thyme
1 tsp. poultry seasoning
1 tsp. season salt (or table salt)
1 tsp. black pepper

Dumplings:

3 cups all-purpose flour
½ tsp. poultry seasoning
1 egg
2 tsp. butter, melted
1 cup milk
1 tbsp. olive oil

 

Directions

Place all of the chicken ingredients in a large stock pot.


Add enough water to cover the chicken plus 1 cup (about 4 cups total).


Bring this to a boil over medium-high heat. Continue to boil until chicken is done and easily breaks apart with a fork – about 1 hour for frozen breasts, 30 minutes for fresh.  

While chicken is cooking, you can make the dumpling dough. Here’s how.

In a medium size bowl, add the flour, poultry seasoning and egg.


Next add the butter, oil and milk.


Using a fork, mix until everything is blended and dough forms. Cover & set aside until ready to use.


Once the chicken is cooked thoroughly, remove it from the stock – keep the stock!  Using two forks shred the chicken into bite size pieces.


Return the chicken to the stock and bring it back to a full boil.

Using a teaspoon, drop the dumplings into the stock a few at a time, stirring gently as you add them.


Reduce heat, cover and simmer for about 30 minutes. Stir once or twice during the final cooking time.

Garnish with a bit of dried parsley or thyme.
