What You Need:
Pumpkin Layer:
- 1 egg, slightly beaten
- 1 C fresh pumpkin puree
- ⅓ C sugar
- 1 tbsp heavy cream
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp ginger
Pecan Layer:
- 2 eggs, slightly beaten
- ⅔ C light corn syrup
- ½ C sugar
- 3 tbsp butter, melted
- ½ tsp vanilla
- 1 C chopped pecans
How to Make It:
- Pumpkin Layer: In a large mixing bowl, combine egg, pumpkin puree, sugar, heavy cream, cinnamon, nutmeg and ginger. Spread the pumpkin pie filling evenly over the bottom of the unbaked pie shell.
- Pecan Layer: In a medium-mixing bowl, combine eggs, corn syrup, sugar, butter and vanilla extract. Fold in pecans. Spoon pecan pie filling over pumpkin layer.
- Bake 50-60 minutes at 375° F, until center of pie is set.
